So, what did you have/make for dinner?

As I mentioned in IM’s thread, I was planning to make pollo asado, which I turned into tacos with homemade salsa verde and the typical onion & cilantro salsa.

Finished tacos. Salsa verde is not pictured because it must be applied immediately prior to taco consumption. Yes, they’re on a paper plate to approximate the family backyard barbecue experience, and because I’m ghetto like that.

Those look so good. Luckily I have plenty of open restaurants close to my house, including good Mexican. I ate the last of a lentil soup I made last week, which was shockingly good considering my middling affinity for cooking.

salmon with some pesto, and in another dish red potatoes in the oven with a small onion. Both with olive oil.

I had leftover pizza, but it wasn’t enough so I made a quick snack of bacon and eggs with some sliced tomatoes. I think simple breakfast food is my go-to for when a snack is a bit too small of a portion but a full meal is too much.

Those tacos look good though... man I haven’t had tacos in a long time.

Thanks! Your salsa looks great too. I don’t have a store-bought solution to point you to but it’s an easy marinade to make: soy sauce, honey, mirin, rice vinegar, garlic, ginger, and chili paste (omit if you prefer a sweeter style vs. spicy ).
